Who says dessert can't be healthy. Carrots are the first ingredient, this shouldn't even be a dessert, this is more of a main course dish, unless you opt for the added frosting, then it's totally a dessert dish. Seriously though, this cake is super moist, and tastes nothing like carrots.

Carrot, flour, corn oil, sugar, brown sugar, eggs, raisins, dried cranberries baking soda, cinnamon, vanilla, salt
